Pasta Pomodoro
2 packages(8 oz) angel hair pasta
1/4 cup olive oil
1/2 chopped onion
4 cloves garlic
2 cups Roma (plum) tomatoes diced
2 tablespoons balsamic vinegar
1 (10.75 oz) can low sodium chicken broth
crushed red pepper to taste
fresh black pepper to taste
2 tablespoons chopped fresh basil
1/4 cup grated Parmesan cheese
Bring large pot of lightly salted water to a boil. Add pasta and cook until al dente and drain.
Pour olive oil in a large sauce pan over high heat. Saute onions and garlic until clear. Reduce heat to medium-high and add tomatoes, vinegar and chicken broth, simmer for 8 minutes or until sauce thickens.
Stir in red pepper, black pepper, basil and cooked pasta making sure to toss thoroughly. Simmer for about 5 more minutes and serve. Top with grated cheese to taste.
